Red Velvet Ice Cream=Winner!

Last week, Chef Chloe Coscarelli (the abnormally beautiful genius behind the Chocolate Strawberry Shortcake Cupcakes I posted a while back) announced a friendly little ice cream contest on her Facebook page. She asked fans to tell her their dream ice cream flavor. Chloe promised to create a vegan recipe for the winning suggestion, which would be featured on her website, along with the fan who suggested it.
One of the winning suggestions (it was a tie!) was for Red Velvet Cake Ice Cream, pictured above. And the Facebook fan who suggested that no-brainer flavor combo? Me!
I can’t wait to try this out! Quite thoughtfully, Chloe provided a variation for each recipe for those who are lucky enough to own an ice cream maker and those who aren’t (including moi). Thankfully, my in-laws have an ice cream maker, so I will eventually get the chance to try making this from scratch, but in the meantime, it’s Vanilla Almond Dream for me, baby!
I’ll be sure to keep everyone posted on how this turns out. I think I’m going to test out swirling in a little Tofutti Better Than Cream Cheese in one of my first batches, to get the full-on Red Velvet Cake taste. If anyone gets the chance to try this out before me (with or without cream cheese), let me know what you think!
Bonus: We all now also have Chloe’s recipe for Red Velvet Cake – which is guaranteed to be dynamite. Vegan cream cheese icing is pretty easy to come by (a good recipe for it, anyway), so there will be some new crimson cupcakes coming out of my oven in the very near future!
